Wash the beans and cut into small pieces.

Cook the beans. Cool in cold water and drain.

Pour in two eggs, add appropriate amount of salt, white sugar, pepper and starch and mix well. No need to add water.

Heat the oil in a pan and add the bean and egg liquid. Once solidified, shake gently to prevent it from sticking to the pan.

Cut into small pieces with a spatula. Fry again for a while.
