Peanut Braised Pork
Overview
Yesterday I went to Lanbai to pack up soybean-braised pork trotters. Children and adults liked it very much. Then I remembered that there was a breakfast shop downstairs from the office where the braised peanuts were very delicious, so I thought about making peanut braised pork. It is simple to make but very delicious. The children had a great time eating it for lunch! What a great reward for me!

Rinse the peanuts, soak them in water for half an hour and set aside. If you have enough time, you can soak them for a while longer to make them more delicious

Cut the pork belly into small cubes of about one centimeter. Don’t cut it too big. The smaller ones are more delicious and of course more suitable for children to eat

Put the diced pork belly into the pot, add a little water, then turn on high heat and stir-fry. After the water dries, turn to low heat and simmer out the oil. Be careful not to burn it.

Put the peanuts and soaking water into the pot, turn up the heat and bring to a boil

After boiling, add ginger slices, garlic cloves, whole green onions, star anise, cinnamon, and bay leaves, then add an appropriate amount of salt, cooking wine, and light soy sauce. Boil the water dry and turn off the heat. The soup is best when the ingredients can be covered.

Next, it can be stewed in the pressure cooker. I happened to want to stew soup, so I put a steaming rack and put the braised peanuts in and stewed it together. It was very convenient to make one soup and one dish at once.
