Cut potatoes into cubes and soak in water for later use

Cook the pork ribs under cold water. After the water boils, skim off the floating residue. When cooking, add a few star anise to remove the fishy smell

Remove the ribs and drain

Heat oil in a pot, break up a few rock sugar and dissolve

Put the spareribs into the pot and stir-fry until browned

Add star anise, green onion, ginger and garlic and stir until fragrant

Add soy sauce and boiling water. The water should cover the ribs. After boiling, turn down to low heat and simmer for 30 minutes

Add potatoes and stew them until cooked
