Sesame tofu
Overview
It is already summer, and cold dishes are essential. The cold tofu we had when we were children, what we most like the most is the thick and fragrant sesame sauce (that is, sesame sauce), which fills our mouths with the taste of our childhood.

For a piece of tofu, first cut it into long slices and blanch it in hot salt water to remove the smell. I wanted to feed it to my baby, so I boiled it. Once the water is boiling, turn off the heat and take out the tofu. Remember to add salt to the water, which will make it more flavorful.

Then cut the tofu into square pieces, which can be decided according to your own preference, because some people also like to cut it into rectangular strips.

Here I used small green vegetables. I blanched them in the morning and forgot to take a photo of the process. I will briefly describe the steps. I washed the green vegetables by soaking them in baking soda and salt water (this feels a bit obsessive, but in fact, only one of them can remove pesticides), and then blanched them in water. I added a little oil and salt to maintain the color and taste.

Stir the baby greens and tofu. You don't need to add the baby greens.

Then there are the seasonings, light soy sauce (fresh in June), sesame oil, sesame juice (I like this the most), and salt. The amount of these seasonings depends on your own taste. I add salt to the tofu and green vegetables, so I basically add a little when accompanying them, and the light soy sauce also has a taste.

Heat oil in a pot, add scallions, and pour it on the tofu. It's similar to burning scallion oil, because my family doesn't like to eat raw scallions.
