Clean and chop the sea bass into pieces and set aside.

Cut old tofu into small pieces

Prepare garlic cloves, ginger slices, and coriander.

Heat oil in a pan, sauté the ginger slices first, then add the fish pieces and fry until golden brown on both sides.

Change to a larger pot and fry the tofu as well.

Add enough water to boil and continue cooking.

Cook until the soup turns milky white and add coriander.

Add 2 or 3 slices of sour bamboo shoots (you can omit it if not available), salt, chicken essence, and cooking wine to taste.

Ready to eat.
