In order to practice the pleats, I had to wrap the buns a few more times. I thought about it over and over. Slowly, I found that my pleats were faster and the pleats were more beautiful than before, and I was able to do it. Now I took a photo of my process of pinching and folding. 1. 1 Prepare the dough and ferment it for 30 minutes before kneading it to deflate it. Knead into long strips and divide into equal portions.

3. 3 Take one dough and roll it into a round shape with thin edges and thick middle. Fill it with filling. Hold the dough with your left hand and pinch the outer edge of the dough with the thumb and index finger of your right hand to make the first pleat.

   

4. 4 Push forward with the index finger of your left hand, pinch it with the index finger of your right hand, and pinch together with the first one.

   

5. 5 In this way, everything begins and moves forward. Use the thumb of your left hand to press the filling into the bun skin (if there is too much filling). When pinching the folds with the index finger of your right hand, gently lift it up so that more filling can be packed.

   

6. 6 The pleats should be pinched evenly and the pressure should be even.

   

7. 7 Take your right hand away and look like this from the side.

   

8. 8 Then wrap it forward.

   

9. 9 If the bun surface is a little soft and sticky, you can dip the thumb and index finger of your right hand into the cloth surface.

   

10. 10 Take your right hand away again and see what the shield bun looks like.

    

11. 11 When finishing, the last pleat must be pinched together with the first pleat to form a complete circle.

    

12. 12 After pinching it, tidy it up a little.
