Chop the meat into minced meat

Add cooking wine, salt, pepper powder, cornstarch, mix well and set aside

Cut the eggplant in half, cut it slowly and diagonally, do not cut off

Sprinkle the cut eggplants with cornstarch to prevent the meat from falling off

Chop the green and red chilies and garlic into foam and set aside

Press the minced meat into the gaps of the eggplant, as shown in the picture

Put some oil in the pot and fry the side with minced meat first

Then fry the other side

After frying, add water to submerge the eggplants.

Then pour the chopped green and red chili powder and garlic powder into the pot and cook for a while. Thicken the sauce before serving and sprinkle with chopped green onion
