Bread machine makes sourdough toast

Ingredients: 300g high-gluten flour, 20g milk powder, 160g water, 40g egg liquid, 48g sugar, 4g yeast, 30g butter, 4g salt. Soufflé filling: 30 grams of butter, 25 grams of powdered sugar, 10 grams of eggs, 30 grams of milk powder (soften the butter for making the soufflé filling and set aside.)

Place all ingredients except butter into a bread pan, adding liquids first and then solids.

Select the dough mixing program and set the time to 20 minutes. After stirring for 15 minutes, add butter. (Butter does not need to be softened) After adding butter, the dough may feel a little thin, but do not add flour or the like. Wait until it is mixed and then check whether it is thin. If it is thin, you can add more flour and stir.

Select the dough mixing program again, and check the dough after mixing for 20 minutes. Use your hands to pull out a thin and elastic layer of dough.

Select the fermentation function and ferment the dough until it doubles in size.

Take out the dough, deflate it, and press it gently with your hands to release the air bubbles inside.

Knead the dough and let it rise for 15 minutes.

During the proofing period, you can make soufflé fillings by mixing softened butter with 20 grams of powdered sugar, 10 grams of eggs, and 30 grams of milk powder and stir evenly. (If it feels too thin, you can add some more milk powder)

Roll the dough into a rectangular shape, spread the prepared puff pastry evenly on top and roll it up, making the joints a little thinner.

Use a knife to make a slit on one side, twist it, and place it in a bread bucket to ferment. (It’s not pretty, so just make do with it)

Ferment for an hour, until it is eight minutes full.

Select the baking function, the time is 40 minutes, and the baking color is medium.

The bread is out of the oven. I brushed the egg wash 30 minutes before the end of baking so that the color would appear darker. (I suddenly thought of brushing the egg liquid, and then I brushed it. There was no information written on it)
