Prepare various ingredients. Score a few scratches on the back of the cleaned bass to allow for flavor.

Wash the peppers, remove the stems and cut into small pieces. Peel, wash and mince the garlic cloves.

Wash the mushrooms and remove old roots. Wash, peel and slice the baby potatoes.

Peel and slice the ginger, stuff a few slices into the belly of the sea bass, and place the rest on a baking sheet lined with tin foil along with the washed and chopped chives.

During this period, rub the entire fish body with salt, then apply cooking wine + light soy sauce, and marinate for 15 minutes.

Place the marinated fish in a baking pan, pour light soy sauce over it, place ginger slices and scallions on top, and bake in the oven for 20 minutes.

While the fish is grilling for the first time, sauté the small peppers, garlic and black bean paste until fragrant.

After the first pass of grilling the fish, pour the fried sauce and light soy sauce over the fish, and then lay it on top of the fish with mushrooms and potato slices. Place in the oven and continue baking for 20 minutes.
