  1. Use scissors to cut a small opening in the shrimp head, use a toothpick to pick out the stomach of the shrimp, remove the sand line at the tail, and cut off the small claws.

  4. Wash the seasonings and drain them. Put them on a plate and set aside. I only put two chili peppers. If you like it super spicy, you can put a few more. There are some condiments on the plate that I don't recognize. They were prepared by the owner of the dry goods store.

  5. Put about 500ml of oil (3--4 pounds of lobster) into the pot, bring to a boil and add ginger, garlic, peppercorns, eight-purpose cinnamon and other seasonings until the aroma comes out

  10. Stir-fry for two minutes, add cooking wine and simmer for one minute. Crack the shells of the pre-cooked free-range eggs slightly and put them into the pot. Add water and simmer for more than 20 minutes. Add some water when the soup is gone. After simmering, add a small spoonful of sugar and chicken essence to taste, and you are ready to serve

  11. Lift the pot. I forgot to add the chopped green onions. It’s a generous portion. Although it doesn’t look as good as the ones in restaurants, the taste is definitely not inferior to it. The ones you make yourself are much cleaner, and they don’t use big spoons of MSG like restaurants

  12. Are you drooling? If you like spicy food, you can add more chili peppers. I only add two chili peppers when my children eat it, which is a bit spicy
