Prepare the raw materials and soak the fungus first.

Beat the eggs with a little salt.

There is no need to put oil in the pan. Heat it over medium-low heat, pour in the egg liquid, and turn the pan to spread the egg skin into an even thickness. It’s better to use a non-stick pan.

Let the egg skin cool and cut into shreds. Cut the other ingredients into shreds of the same size and set aside.

Heat oil in a pan, add minced ginger and garlic and stir-fry until fragrant.

Add green and red pepper shreds and stir-fry.
