Overview
I like to eat lotus roots, and it coincides with the season when lotus roots are on the market, but I am worried about how to make lotus roots for babies. Today I tried this lotus root cake, which breaks the shape of the lotus roots. The fried cake is crispy on the outside and juicy on the inside. Prepare the ingredients: a section of lotus root (I forgot to take a photo of the lotus root😓), and a piece of local pork.

Chop the pork into minced meat.

Add minced garlic, salt, sugar, cooking wine, light soy sauce and a spoonful of olive oil to the minced meat, mix well.

Peel the lotus root segments and cut into thin strips.

Mix the stirred minced meat and shredded lotus root, add cornstarch and beaten egg liquid (note that the egg liquid is added in an appropriate amount to avoid the filling being too thin), and mix well.

Heat oil in a pan, add lotus root cakes, and fry over medium heat until both sides are golden brown. Insert chopsticks into the lotus root cakes for 2 or 3 seconds and take them out to test the temperature. If they feel hot, they are done.
