Put one piece of ginger, two pieces of radish, and pieces of mutton into a deep pot with cold water, bring to a boil over high heat, and simmer for 3 minutes until the smell of blood is no longer visible

After blanching, take out the mutton pieces and rinse them with clean water. Discard the water, radish and ginger used to blanch the mutton.

Pour the washed mutton into the pressure cooker, add the remaining two pieces of ginger, 5 garlic cloves, chicken essence, salt, and add cold water to cover the mutton. Turn to medium-low heat and simmer for 10 minutes.

After the pressure cooker naturally releases pressure (do not force the air to release, let the mutton simmer slowly in the pressure cooker while the pressure is released), uncover the pot, add the radish cubes and red peppers and cook uncovered over high heat until it boils again, then reduce to low heat and simmer for 15 minutes. Stir occasionally.
