When we bought the hairtail, the fishmonger helped us chop the hairtail into pieces. After we got it back, we cleaned it, especially the black stuff on the belly.

Spread salt evenly and marinate for half an hour.

Heat the oil in the pot until it is 80% hot.

Add hairtail.

Fry until both sides are golden brown, drain the oil and serve.
