Soy milk
Overview
Soy milk is one of the four most popular breakfast foods for Shanghainese people. Because so many people love it, there is now a midnight snack of fried dough sticks and soy milk. My family also likes to make some of it on weekends, and mix it with fried dough sticks and rice cakes. It’s a satisfying breakfast! Just be careful when cooking soy milk as it can easily overflow, so keep an eye on it.

Soak the soybeans in water first, usually at night, and they can be used early the next morning.

Take some soaked ones, add an appropriate amount of water and grind them in a food processor. The finer the grinding, the better.

Spread two layers of gauze on the basket and place the basket on the pot.

Pour the ground soy milk into gauze and filter it. The soy milk can be filtered into the pot, and the bean dregs will remain on the gauze.

Bring the filtered soy milk to a boil over high heat and then simmer over medium heat with the lid open for a few minutes.

You can add sugar to the cooked soy milk or make it salty.
