Black rice and red dates glutinous rice cake
Overview
The black color enters the kidneys. After the black rice matures, it becomes soft and glutinous with a kind of chewy texture. It tastes very good. I used black rice from Bama, Guangxi. The grains of black rice are crystal clear and the rice has a strong aroma. The black rice glutinous rice cake with red dates is even more fragrant with dates and rice. When dipped in white sugar, the texture and taste are great.

Ingredients: glutinous rice, black rice, red dates.

Wash the black rice and glutinous rice in advance and soak them in water for 2 hours.

Cut the red dates into small dices.

Add an appropriate amount of water to the glutinous rice and black rice, put the diced red dates into a small bowl, and steam in a steamer for 20 minutes.

Stir the steamed black rice and glutinous rice with chopsticks and let cool.

Use a suitable container, cover it with plastic wrap or apply a layer of cooking oil, dip a spoon into cold boiling water, scoop out an appropriate amount of glutinous rice and spread it on the bottom of the container and flatten it, then spread a layer of diced red dates.

Then spread the black rice evenly on top and flatten it with the back of a spoon.

Spread another layer of glutinous rice, and finally a layer of diced red dates, compact it and sprinkle with cooked black sesame seeds. You don’t need to sprinkle them. Take the shaped glutinous rice cake out of the container.
