Smoked duck breast with orange salad
Overview
Not long ago, I found marinated smoked duck breast in the supermarket. It tastes great and is very easy to make. Later, I had a salad of watermelon, kiwi and feta cheese in a French restaurant. I was pleasantly surprised to find that the salad with fruits was very sweet and refreshing. Today I came up with such a dish, using my favorite orange.

Process the orange first. After removing the head and tail, remove all the white skin along the shape of the orange

Then avoid the film, take out the pulp piece by piece, and use a bowl to catch the juice that flows out

Wash and drain the green leafy vegetables used in the salad, and cut the cherry tomatoes in half

Preheat the oven to 180 degrees Celsius and wrap the purchased smoked duck breast in tin foil

After wrapping the duck breast as shown in the picture (to prevent the moisture from evaporating during the baking process), place it in the oven for 18 to 20 minutes

Cook pasta, add olive oil to a pan, add garlic and heat over medium heat until fragrant

Put the pasta sauce in the pan and heat for 2 minutes. When the pasta is cooked, remove it and add it to the wok and mix well with the pasta sauce. Season with salt and pepper

In a large bowl, add the leafy greens, cherry tomatoes, oranges and orange juice, feta cheese, 3 to 4 tablespoons of olive oil, and salt and black pepper to taste. Stir gently with a spoon until uniform

After the duck breast is roasted, make a small opening on the side and pour the juice inside on the prepared salad

In another pan, add a tablespoon of olive oil and heat over medium heat, then add the duck breast, skin side down

Fry over low heat for 2 to 3 minutes until the duck skin is browned
