Stir-fried amaranth with garlic
Overview
The sister next door gave me a handful of red amaranth. I haven’t seen it for many years. The fresh purple-red leaves look really pleasing. Amaranth is commonly known as longevity vegetables. Red amaranth has the effect of clearing away heat, detoxifying, nourishing blood, and strengthening the body. Today, I am taking advantage of the weekend to make a stir-fried amaranth with minced garlic and serve it with freshly pressed noodles. It is delicious.

Soak the red cabbage with some salt for five minutes and rinse thoroughly.

Remove and drain.

Cut off the old gossip.

Press the garlic cloves with the back of a knife and chop into small pieces. Set aside.

Preheat the pan over medium heat, add peanut oil, and stir-fry the garlic until fragrant.

Add red amaranth and stir-fry.

Fry until soft and add salt.

Stir fry a few more times, adding less water if it becomes dry.
