Spicy fried eggplant shreds
Overview
Eggplant contains protein, vitamin A, B vitamins, vitamin C, vitamin P, fat, sugar and minerals. Eggplant is cold in nature and sweet in taste. It enters the spleen, stomach, and large intestine meridians. It has the effects of activating blood circulation and removing blood stasis, clearing away heat, reducing swelling, and widening the intestines. My family likes to add some chili pepper to the fried eggplant, and it tastes really good.

Wash the round eggplants.

Cut into slices and then cut into strips.
