Remove the hair from the pig's trotters, wash them, blanch them in boiling water and set aside

Slice the ginger, wash the star anise, cinnamon twigs, cinnamon bark, peppercorns and tangerine peel and set aside

Pour oil into the pot. When the oil is hot, add sugar cubes until the sugar cubes melt into sugar color. Stir constantly to prevent sticking

Pour the ingredients from step 2 into step 3 and stir-fry, then add the pork trotters from step 1 and stir-fry continuously

Stir-fry the pig's trotters in step 4 until they turn into sugar color

Add appropriate amount of water and light soy sauce to the pig's trotters in step 5. After boiling, pour into the pressure cooker and simmer on low heat for half an hour

Pour out the pressed pig's trotters from the pressure cooker, pour them into the pot to collect the juice, add the minced garlic and stir-fry. When the aroma is overflowing, add the green onions and continue to stir-fry for a few more times
