The little lolita from Bordeaux——Keluli (silicone template)
Overview
French pastry, thick and sweet. Beautiful appearance. It can be called a dessert lolita. The materials are simple and the cost is very heavy. The emphasis is on molds, time and patience. Love baking, but not obsessed. Even if you don’t have a high-end copper mold, ordinary silicone molds can still create a lolita. Learn to understand something. Read about its life experience. Try to participate in its growth. Accept its imperfections happily. About Keluli. It takes care and time. Accept it with an appreciative eye...accept

Ingredients
Steps
-
Peel 1/3 of the vanilla pods, put them all into the milk, heat until boiling and then remove from the heat, cover and simmer for more than 20 minutes to allow the vanilla flavor to penetrate into the milk, filter out the vanilla pods
-
Mix egg yolks and whole eggs well
-
Pour in the powdered sugar and mix well
-
Sift in the flour and mix well, then add the melted butter and mix well
-
Add rum
-
Pour the milk into the batter slowly and mix well
-
Put the vanilla pods into the milk batter, seal and refrigerate for more than 48 hours
-
After 48 hours, take out the batter and stir it. Preparation work before baking: melt the butter and spread it on the mold, heat it in the oven at 180 degrees for 2-3 minutes, take it out and invert it, and drain off the dripping butter
-
Fill the mold with batter to 90% full, or completely (too little will make the finished product too short). Heat the oven to 170 degrees and bake for 60 minutes. At the 25th minute, if you see the batter overflowing the mold, take it out with insulated gloves, twist the mold left and right, carefully heat the oil, and tap the bottom to let the batter retract into the mold. Repeat this step 4 times or more until the batter no longer overflows the mold. Turn the temperature to 180 degrees and bake for 20 minutes
-
After the machine is shut down, take it out of the oven and let it cool slightly before demolding
-
Silicone molds are definitely not as good as copper molds in terms of height and coloring, but with the cooperation of the oven and proper timing, they can still be as beautiful as flowers. After all, this is just fun baking, not professional. If you make it successfully, it is already a reward. Now, enjoy the little lolita in peace
