Ingredients
Steps
-
Wash the eggplants and green peppers and choose lavender eggplants. Dark purple eggplants have too hard skin and poor taste!
-
Cut an eggplant in half and split lengthwise. Make cuts diagonally, but do not cut them, to form a diamond-shaped grid, which will make them softer and more flavorful when fried.
-
Mince garlic
-
Cut the green pepper into strips as long as the eggplant.
-
Heat the pot. When it is smoking, pour the eggplant in without adding any oil. Spread out the pan and fry until the skin becomes charred on both sides. Be sure to use low heat. Otherwise it will be blurry.
-
Remove the eggplant, put oil in the pot and bring to a boil, add the eggplant and stir-fry, add minced garlic, soy sauce, and bean paste.
-
Add the green pepper, add a little salt, stir-fry the green pepper, stir-fry with the eggplant, add a little water, and simmer over low heat for a while.
-
Stir until the soup comes out and serve.

It looks like a very ordinary home-cooked dish, but it is really delicious.
