Soak the fungus and wash it, cut the pepper into strips;

Prepare two free-range eggs, break them into a bowl and stir evenly;

Add an appropriate amount of oil, wait until the oil is hot, pour in the egg liquid, and fry over low heat until golden brown;

Take out the fried eggs and set aside;

Pour ginger, fungus and chili pepper into hot oil and stir-fry over medium heat. The fungus will crackle when stir-fried. Add water after stir-frying for a while to prevent splashing; in addition, the fungus will be especially crispy after being stir-fried;
