Mushroom and Slider Chicken Claypot Rice
Overview
A meal for one person - Claypot rice with mushrooms and chicken. I have been helping out at a chicken chop shop these days. I get home from get off work around 12 o'clock every night. After washing up, it's one or two in the morning. In the morning, I have to get up early to take Chen Chen to school, buy groceries and go home to cook for Brother Bao. He packs up and feeds the rice and sends it to my parents. It's noon and I rush to the store to help. I have no time to write articles or update the official account. We haven’t reached the stage where we are exhausted yet, so friends, don’t forget to come to my official account to read articles, share dishes, and try out in the kitchen. My father-in-law went back to his hometown, Chen Chen went to school, I was trying to lose weight, and He He ate less. He really only had to cook for Brother Bao alone. Let's use a rice cooker to cook. You also have to use a wok to stir-fry something, and then put it on the plate. You have to use a bowl to eat. In this way, after Brother Bao finishes eating, I have to wash the rice cooker, wok, plates, and bowls and chopsticks. Uh... when you cook for one person, you have to cook less food and less vegetables, but you still have to wash the dishes. For someone like me who wants to be lazy, I am really reluctant. In the time it takes to wash the extra pots and dishes, I really feel that I can write half an article. After thinking about it and combining it with the tools at home, I think claypot rice is indeed a good choice for home. So, my brother Bao’s lunch these days is mostly claypot rice. For those who want to make this clay pot rice, you must first have a casserole at home. In fact, some household rice cookers also have the function of cooking rice. You can also try this method. Here we go! Note: Sometimes, when a person lives alone, he is often afraid of trouble, and is not so particular about many things, and wants to keep everything simple. Maybe I used to think that simplicity doesn't matter, especially when it comes to food, it's just to satisfy my hunger and warm my stomach. Nothing is more precious than time. Only now, I don't think so. Time is really precious. Every day we live now is the youngest day in our respective lives. If we don’t let ourselves live a happy life when we are youngest, how can we be worthy of such a life in the world? I am a very serious person sometimes. I either don’t do something or do my best if I do something! The same goes for cooking. Either don't do it, or do it so that others think it's good. I don’t want to waste the good time of my life!

Steps
-
Measure out 1 cup of rice (1 cup of rice in my measuring cup can make 2 bowls of rice, which is more than enough for Brother Bao. You can decide the amount of rice according to your own needs.)
-
Wash the rice and soak it in water for at least half an hour (this way the cooking time will not be long, and the rice will be cooked easily when cooked in a clay pot, but the time must be controlled, otherwise the rice will be burnt easily.)
-
Wash the chicken legs and cut into small pieces. (I don’t know how to cut the chicken. I asked the boss to cut it at the live poultry vendor, and then I cleaned it myself.)
-
Remove the stems of the wet mushrooms and cut them into slices, and cut the ginger into shreds.
-
Add 3 tablespoons of cornstarch, appropriate amount of salt, chicken essence, soy sauce and oyster sauce to the washed chicken.
-
Add chopped mushrooms and green onions.
-
Cut the red pepper into small rings and add to the plate with the chicken legs.
-
Mix all the seasonings and ingredients in the chicken and marinate for at least 15 minutes. (If you want the chicken to be more flavorful, you can marinate it longer.)
-
Boil the casserole dry.
-
Add a little peanut oil to the casserole and heat it slightly, no need to boil.
-
Slide the oil in the casserole until it covers the bottom of the casserole. (After doing this, the rice will not stick to the pot so easily, and the pot will be easier to clean. Of course, you cannot burn the rice. If it is burnt, it will not be so easy to clean.)
-
Pour in the drained rice
-
Add enough water and spread the rice evenly. (My experience tells me that the water only needs to cover the surface of the rice. The rice will not be too soft, but will have clear grains, which is delicious and beautiful to take pictures.)
-
Cover the pot and cook over medium heat.
-
Cook until the rice boils for the first time, then turn off the heat.
-
Arrange the chicken thighs directly on the rice that is not yet fully cooked.
-
After the chicken is cooked, cover the pot, cook over medium heat, and start the timer, 10 minutes.
-
Turn off the heat, do not open the lid, and let simmer for another 3 minutes to ensure that the chicken thighs are cooked through. After 3 minutes, open the lid and eat! It is both a claypot rice and a rice bowl, so delicious that your tongue will forget to spin it!
-
Tender chicken thighs.

The fragrant rice is so delicious that you forget to turn your tongue!
