Pork Ribs and Lotus Root Soup
Overview
When I was in Hubei, every winter my mother would sit in a casserole on top of the briquette stove, stewing big-bone lotus roots in it. Drinking a bowl of it would be such a blessing! I miss that taste so much. I rarely go home now. Every time I go back, it’s neither cold nor hot, which is not the best time to drink pork ribs and lotus root soup! I happened to buy a section of lotus root yesterday, let’s try it for yourself! I used an electric casserole, put it in and stewed it on its own, and the finished product was great!

Pour cold water into the pot and remove the blood foam. After taking it out, wash it with boiling water. If you use boiling water, the meat will be softer and more tender!

Prepare onions, ginger, and lotus root.

I use an electric casserole. I turn on the electric casserole in advance and heat the water. Then put the ribs, green onions, and ginger into the pot.

Cut the lotus root into hob pieces.

Just put the lotus root into the pot. My casserole simmering time is 4 hours, so I add salt after 3 hours of simmering.
