Simple version of Mapo Tofu
Overview
I really like eating this kind of soft tofu with a tender texture and smooth taste. It is not like the texture of old tofu, which is a bit bitter. My favorite way to eat it is to stir-fry it with bean paste, it's very flavorful. The disadvantage is that I put too little water and there is no ruddy and beautiful soup~~ I should pay attention to it next time I make it.

Wash the soft tofu. Cut into square pieces. (What a tragedy, I forgot to take a photo again!)

Prepare bean paste.

Wash green peppers, onions, ginger and garlic.

Cut green pepper into small pieces. Chop the onion and ginger into small pieces and pat the garlic.

Heat the oil in a pan, add onion, ginger and garlic and stir-fry until fragrant.

Add bean paste and stir-fry until fragrant.

Add tofu and stir well.

Add salt.

Add pepper powder.

Add the green pepper, stir-fry a few times, add a little water and simmer for a while.

Finally add chicken essence and stir-fry evenly.
