Prepare the sauerkraut and green onions, soak the vermicelli and mince the green onions.

Wash the sauerkraut, squeeze out the water, put onion, ginger, garlic, and pepper oil in the pot and stir-fry the sauerkraut until it tastes sour.

Pour in water and boil for five minutes.

Add the soaked vermicelli and continue cooking for half a minute, then sprinkle with salt and chicken essence and mix well.
