Overview

I am a Cantonese. Many people have the impression that Cantonese people can make soup. I remember that the soups in my hometown used to be carrot, horse hoof and ribs soup, salty olive chicken soup, and herbal soup with refreshing tonic chicken or ribs. I can’t figure out when I started to think of one ingredient that can make many different soups, tea tree mushrooms. I don’t know when I heard about it. The soup here is a good one. I remember the first time I made it for the old man, I could say that it completely attracted his soul. I already knew clearly that the tea tree mushroom soup was the old man’s favorite soup, so I would make a pot from time to time. The second most popular soup was probably pork belly and chicken soup. A woman should grab a man’s stomach and make a pot of his favorite soup to lure him back no matter how far away he is.

  1. Prepare the ingredients, half a black-bone chicken, two ribs, tea tree mushrooms and shiitake mushrooms, wash them all, rinse the black-bone chicken twice more, cut off the stems of the tea tree mushrooms

  2. Add all the ingredients into the pot with enough water and bring to a boil over high heat

  3. After the water boils, skim off any foam, then cover and simmer over low heat for 3 hours. Add salt to taste before eating (I poured it into an electric stew pot and simmered for 3 hours)
