Turmeric Chicken Rice
Overview
The rice in local meals is very particular. Not only should the rice grains be shiny and non-sticky, but it should also be salty, delicious, and moderately soft and hard. Today I stewed an old hen and used chicken and chicken soup with some turmeric to make chicken rice. It is delicious and healthy. Soak the rice in salt water for half an hour, rinse repeatedly until the rice turns white, drain and set aside.

Tear the cooked chicken into small strips and set aside.

Cook the green beans, drain and set aside.

Heat the chicken soup and set aside.

Add corn oil and 1 tablespoon butter to a non-stick pan, add rice after melting.

Stir-fry over medium heat until the rice grains become translucent.

Add hot chicken stock.

Add all seasonings.

After stirring, bring to a boil over high heat.

Cover, turn to low heat and simmer until water on the surface dries up.

Add green beans and chicken.

After stirring from the bottom for a few times, add the remaining butter and stir gently until it melts.

Cover and continue cooking over low heat for 5 minutes.

Turn off the heat, cover the pot with kitchen paper, and continue to simmer for half an hour.
