Overview

This time I tried a new shaping method. Instead of mountain toast, it looks like mountain toast. The shape of the three peaks is changed into a twist. Each toast is only rolled once, and the relaxation time is omitted in the middle. This can save some man-hours. This is the first time I have made this pattern. Although the texture of the finished product is not as obvious as that of the mountain toast, it still has its uniqueness. The overall feeling is pretty good, and the production process is quite simple. Its appearance is comparable to that of the mountain toast. I will make it frequently in the future. I recommend it to those who like toast to give it a try when they have time.

  1. Mix the ingredients into a dough and ferment it until it is no more than four times in size (I made the dough at night and took it out the next morning to start cooking);

  2. Take out the dough and tear it into small pieces, mix it with the main dough ingredients except butter, and knead the dough until smooth;

  3. Add butter and knead again until fully expanded;

  4. Divide the dough into four parts and let rest for 15 minutes;

  5. Use a rolling pin to roll it into a long tongue shape, thin the bottom edge and roll it into a long tube shape;

  6. Complete each one in turn;

  7. Knead it slightly, hold the top with one hand and twist it into a twist with the other hand;

  8. Place both ends down into the toast mold;

  9. Cover with plastic wrap and put in the oven to ferment;

  10. It takes about an hour to make the mold until it is eighty full (I made two strips at a time), and brush the surface with a layer of egg wash;;
