Vegetable and Shrimp Ball Soup
Overview
Eat shrimp in a different way, basically maintaining the original flavor of shrimp. The minced and seasoned shrimp balls are soft and tender, paired with baby greens and tofu, which is light and delicious.

Remove the heads and skin of the fresh shrimps and remove the intestines. Marinate with a little cooking wine, white pepper, and salt for 15 minutes.

Chop the marinated shrimp with a knife.

Use the back of a knife to chop the shrimp into puree.

Transfer the minced shrimp paste to a bowl and sprinkle in appropriate amount of sweet potato starch.

Use chopsticks to stir in one direction. I added sweet potato flour twice, stirred evenly and then sprinkled it again.

Make water in a pot, use a small spoon to organize the shrimp paste into balls, add the shrimp balls after the water boils,

After the shrimp balls float, cook for a few more minutes until they are done.

After the shrimp balls are cooked, add tofu and green vegetables and turn off the heat after two minutes. I used soft tofu that can be eaten raw, so it can be cooked briefly.
