Steps
-
Wash the salted duck eggs with clean water first. Do not soak the duck eggs in clean water for a long time when cleaning, because if moisture enters the duck eggs, they will easily break during the pickling process. After cleaning, use a clean cloth or kitchen towel to dry the water immediately and let it cool for a while.
-
Soak the dried duck eggs in white wine for 2 minutes. I use the cheaper Erguotou.
-
After taking it out of the wine, roll the duck eggs in a salt bowl to coat them evenly with salt particles.
-
Then wrap each duck egg in a plastic bag or plastic wrap.
-
Place the wrapped duck eggs in the sun to dry for a day. Then put it in a cool and dark place, and it will be ready to cook and eat in 20 or 30 days!
