Red yeast sandwich cookies
Overview
I originally wanted to make a pink sandwich cookie for my nephew, but I accidentally added too much red yeast, and it ended up looking like the picture. I thought I would be disliked by that kid, but in the end, he was so happy because it contained his favorite Dove white chocolate. Well, it tastes really good~~

Ingredients
Steps
-
Soften the butter to room temperature first. Then add the powdered sugar and beat with a hand mixer until completely combined.
-
Pour in the egg mixture in two batches. Beat each time until completely combined before adding the next time.
-
Pour the red yeast rice powder into the cake flour and mix.
-
Sift together into butter paste.
-
Use a rubber spatula to mix until there are no dry powder particles.
-
Place it on the chopping board, gently grasp it with your hands to form a dough, wrap it in plastic wrap or a plastic bag, and freeze it in the refrigerator for half an hour.
-
Then take it out and use a rolling pin to roll the dough to 2mm. Use a mold to carve out a square shape.
-
Then use a small five-pointed star mold to carve half of the square surface into a hollow five-pointed star shape.
-
Preheat the oven to 160 degrees, middle layer, and heat up and down for about 18 minutes.
-
After the test, take it out and let it cool.
-
Melt the white chocolate over warm water, stirring with a spoon.
-
After softening, add sugar needles and stir evenly with a spoon.
-
Remove the complete cookie sheet and spread some chocolate on it.
-
Then take the cookie sheet with the hollow five-pointed star, cover it, and press lightly to tighten. Chill in the refrigerator for 1 hour.
