Overview
Stir-fried amaranth is a widely circulated home-cooked dish. It has the effects of clearing away heat and promoting dampness, cooling blood and stopping bleeding, and stopping dysentery.

Remove old stems from amaranth, wash and set aside;

Slice garlic cloves and set aside;

Heat the oil, pour the garlic slices into the pot, and sauté until fragrant;

Pour in the amaranth and stir-fry, add salt, MSG and white sugar to taste, continue to stir-fry;

During this period, you can cover the pot briefly to allow more water to remain in the pot;

Cook the amaranth over medium-low heat for another 3 or 4 minutes until the juice is completely seeped out and the stems are soft but not rotten.
