Chestnut stuffing
Overview
The sweet and smooth chestnut filling can be used as moon cakes or egg yolk cakes. The sugar content of this cube is already very low and it is not recommended to reduce it any further.

Rinse the frozen chestnuts with water.

Put in the electric pressure cooker and fill it with water. (Measure the water to a little more than half of the chestnuts. Because frozen chestnuts don’t absorb much water.)

Press the bean/tendon button to start cooking, and then open the lid after natural exhaust.

Use a handblender to stir into chestnut puree.

Put into a non-stick pan, add sugar, maltose and 1/3 oil, stir constantly over medium heat to prevent the pan from sticking.

Pour in the oil in 3 batches and fry each time until the oil is completely absorbed.

Fry until the chestnut filling can hold together and the chestnut filling does not stick to the spatula and pot.
