Cut the shallots into cubes and fry them in a frying pan over low heat.

Fry until light reddish brown and set aside. Don't go too far, otherwise it will get fried when hot oil is poured on it at the end.

Add crushed chili pepper, brown sugar, sesame seeds, pepper, and thirteen spices to a waterless container.

Then add light soy sauce, salt, chicken essence, sesame oil and fried green onions.

Stir well until the peppers are moist.

Add more new oil to the remaining oil for frying the onions, add bay leaves, ginger slices, cinnamon and Sichuan peppercorns and fry slowly over low heat. Strain out the spices.

Heat the oil until it smokes slightly, turn off the heat and let it cool for 20 seconds, then pour in the mixed chopped chili.

Stir evenly while pouring to avoid burning.
