Put the duck that has flown over the water into a large pot, add water, green onions, and ginger and bring to a boil over high heat, then turn to low heat and cover and simmer for about 20 minutes.

Flip and cover and cook for about ten to fifteen minutes. Turn off the heat.

Take it out and hang it in a ventilated and cool place, preferably for three to four hours, and wait for it to dry naturally.

Pour the soy sauce into a small dish, heat the pan over low heat and sauté the minced garlic until slightly brown, then pour the hot oil on top of the soy sauce. It is the best dipping sauce for Chaoshan white duck.
