Scones are actually a type of soda bread. I like making scones because they are simple and fast. It takes more than 20 minutes from preparation to baking. It is definitely the first choice for lazy people.

Beat the yogurt, salt, sugar, melted butter and eggs with a hand mixer until smooth.

Sift in the high-gluten flour and baking powder and mix well with a rubber spatula.

Add dried blueberries and lemon zest.

Use a rubber spatula to mix well. If the batter is too dry to stir, add a little yogurt.

Dust the board with flour to prevent sticking. Dip your hands in flour. Shape the batter into a circle about 15 cm in diameter and cut it into 8 equal parts with a knife.

Transfer the scones to a baking sheet and brush the surface with egg wash.

Preheat the oven to 200°C and line a baking tray with baking paper or silicone mat, or use a non-stick baking tray directly. Place in the middle rack of the oven for 15 minutes, take out and let cool for 5 minutes before moving to a wire rack to cool.
