Peel the spring bamboo shoots and blanch them in lightly salted water for 5 minutes.

Chop appropriate amount of bamboo shoots into fine pieces.

Cut the beef tenderloin into shreds, add cooking wine, light soy sauce, and water starch, mix well, add a spoonful of oil, mix well, and set aside for 10 minutes.
