Cut the chicken legs with a knife, remove the oily chicken skin, add ginger slices, and blanch in cold water.

Add rice wine to remove the fishy smell and enhance the flavor. Cooking wine is also acceptable.

When the foam is cooked, take out the chicken legs and rinse them with water. Set aside.

Return water to the pot and add ginger slices.

Then pour in light soy sauce.

And oyster sauce.

I like to add ginger powder, but you can leave it out if you don’t have it.

After the water boils, add the chicken legs and simmer over medium heat for 35 minutes. Turn over halfway so that both sides can be flavored.
