Prepare ingredients, slice potatoes, cut eggplant into hob pieces, and slice green peppers. Soak the cut potato slices in clean water and wash them. Pat a little starch on the eggplant to prevent a large amount of oil from being absorbed during frying.

Dry the potato slices with kitchen paper. Pour enough oil into the wok to cover the ingredients. Heat the potato slices in cold oil until the edges of the potato slices turn yellow. Remove the potato slices and set aside.

Continue to add eggplant pieces and green pepper slices to the oil pan.

Leave a little base oil in the wok, add minced garlic, stir-fry until fragrant, then add eggplant and potatoes and stir-fry. To prevent sticking to the pan during the frying process, add boiling water continuously along the edge of the pan.
