Hibiscus and Luffa Soup
Overview
Salted egg yolks are used to make moon cakes, and the remaining egg whites are added to loofah soup.

Peel the loofah and cut into strips.

Boil water in a pot, add loofah and cook.

Beat the salted egg white with cooking wine.

When the loofah is almost cooked, pour in the egg white and add some scallion oil.
