Wash the lotus root, scrape off the outer skin with a spatula, then cut into slices and put in water (to prevent oxidation) and set aside. Cut green onions into shreds. Prepare the sweet and sour sauce in advance. Mix 3 teaspoons of rice vinegar, 1 teaspoon of sugar, and a little salt and set aside.
