6-inch pie plate. Add 160g of low flour and 1g of salt and mix well. Cut 80 grams of butter into small pieces and mix into the flour with your hands. Rub the butter and flour into a cornmeal-like grit. Add enough cold water to mix the flour into a dough. Let the dough rest on the fresh-keeping layer of the refrigerator for half an hour before use. (I want to prepare breakfast, so I make the dough the night before and keep it in the refrigerator to keep fresh.) The mixed dough is first divided into two and rolled into a pancake. Use a pie plate to press out the bottom of the pancake. Use a fork to make holes to prevent bulging.

Preheat the oven to 200 degrees for 5 minutes, then bake the cake base at the same heat for 10 minutes.

Boil the pears in rock sugar water and drain as much water as possible through a sieve before use. (To save time in the morning, I cooked the pears the night before)

Take out the baked pie bottom and spread the drained pears flat. The remaining dough is rolled into dough and pressed into various patterns with molds. Use large patterns for the bottom layer, and try to use small patterns for filling in the blanks. It will be darker in color when baked.

Brush the pie with egg wash and put it in the oven. My oven is ACA. Preheat the upper and lower settings to 200 degrees and bake in the middle rack for 30 minutes.
