Take 15-20 large red dates. I used first-grade Ruoqiang dates here.

Use a small knife to cut a slit in each red date, roughly the same length as the date, to facilitate removal of the core.

Soak the cut red dates in water for about 30-40 minutes.

Take out the soaked red dates, use a knife to help separate the jujube meat and jujube core, and take out the jujube core inside. Don't throw away the date core, it will be useful when cooking later.

Take an appropriate amount of glutinous rice flour and add an appropriate amount of warm water and stir evenly. What I use here is Sanxiang brand water-milled glutinous rice flour. The ratio to warm water is about 1:1, that is, 30 grams of glutinous rice flour is added to 30-33 grams of warm water.

Knead into glutinous rice balls and set aside.

Take a small ball of glutinous rice and roll it with your hands into the shape of a jujube pit with slightly pointed and fat ends, but the size is about three to four times larger than the jujube pit.

Put the kneaded glutinous rice core into the red dates

Stuff all the red dates into the glutinous rice balls in turn.

Boil a small pot of hot water on the induction cooker.

After the water boils, add rock sugar.

Put all the dates in and cook.

Add the jujube cores that have been taken out in advance to cook, and the taste will be better.

Turn the heat to low and allow the sugar water to fully penetrate into the red dates. This should take about ten minutes.

Put the cooked red dates into a bowl.
