Cut the peppers, pat and mince the garlic, and cut the winter melon into large pieces

Heat the pan with cold oil (a little more than stir-fry) and fry the winter melon over medium heat.

Fry over medium heat for 5 minutes. Each piece of winter melon will be smaller than the previous one, and the water will be almost released. You can scoop it out and set aside.

Leave the base oil in the pot, stir-fry a spoonful of bean paste into red oil, add some chili peppers, garlic and green onion segments and stir-fry until fragrant (I forgot to take a photo and used the photo I took before)

Add the winter melon and stir-fry, add the remaining scallions, peppers and garlic, add 2 spoons of light soy sauce and stir-fry evenly. When it is almost cooked, add 1 spoon of chicken essence and an appropriate amount of salt and stir-fry evenly before serving.
