Pea yellow
Overview
Pea yellow is a traditional snack in Beijing. According to Beijing custom, pea yellow is eaten on the third day of the third month of the lunar calendar. Therefore, pea yellow is on the market every spring and is available until the end of spring. There are two types of pea yellow in Beijing: court and folk. I bought peeled peas online and made them myself! The color is light yellow, delicate and pure, and it melts in your mouth.

Peeled dried peas purchased online

Add 3 times the amount of water and soak overnight

Put it into an electric pressure cooker and add an appropriate amount of water for 20 minutes, just enough to cover the peas

Put the peas into a blender and puree them

Pour the pea puree into a non-stick pan

Add appropriate amount of sugar and stir-fry over medium-low heat

Stir-fry until texture appears and the texture does not disappear easily. Mine is very thick, just fry it for a few minutes

Pour the pea puree into the mold and smooth it out. I put plastic wrap on it, let it cool and then put it in the refrigerator for more than 4 hours
