Wash the fish body and set aside

Cut the fish body into pieces, preferably smaller. The fish body I bought is a bit big and difficult to handle

Wash the cut fish pieces twice with water, then soak them in light salt water for 5 minutes, take them out and drain

Marinate the fish pieces with salt, cooking wine, pepper and minced ginger for 30 minutes

Then add starch and mix well

Heat oil in a pan until it is 70% hot, add fish pieces and fry over high heat until golden brown
