Wash the chicken wing roots, blanch them in a pot, then remove and drain the water.

Heat the oil in a pan and fry the sugar.

Stir-fry the chicken wing roots in the pan.

Add onions, ginger, aniseed, and bay leaves to the pot.

Add dark soy sauce.

Add cooking wine.

Add appropriate amount of water, cover the pot and let it boil. Bring to a boil over high heat, then reduce to low heat and simmer.

Cook until 9 minutes done, add salt and continue cooking. Turn off the heat when the ingredients are cooked.
