Overview

This time I didn’t worry about it. I chose the pattern first and then prepared the materials. I used purple sweet potato to create the color and chose fermented flour.

  1. Peel and slice two purple sweet potatoes, then steam them in a pot;

  4. Knead the dough in the bread machine: first pour the milk, place the salt and sugar diagonally, pour in the egg liquid, olive oil, and high-gluten flour. Make a small hole in the middle of the high-gluten flour and pour in the yeast. Choose 2 kneading programs;

  5. Take the dough out into a stainless steel basin, cover it with plastic wrap or a damp cloth and let it ferment at room temperature for more than an hour. The room temperature is now 32 degrees, and it will be ready in an hour. Put the purple sweet potato puree into the pan and stir-fry it dry. If you like it sweet, add 10 grams of sugar and leave 180 grams of purple sweet potato puree for later use;

  6. The total weight of the dough is nearly 500 grams. After kneading and deflating, divide the dough into two equal parts and roll into balls. Cover with a damp cloth and let rest for 15 minutes;

  8. Sprinkle some flour on the chopping board to prevent sticking, take a dough and smear it with purple sweet potato puree, with the center high and the four sides low. Do not smear the outer ring to facilitate shaping;

  9. Cover with another piece, place a small bowl in the middle, cut into four equal parts, and cut each part four more times, for a total of 16 pieces. Note: A piece of silicone paper needs to be placed under the dough. After shaping, move the paper and the paper to the baking sheet;
